Use prep recipes inside dishes
Make sauces, bases and batches their own recipes, then use them in dishes. Their cost flows through.
Also known as: sub recipe · subrecipe · prep recipe · batch recipe · component · sauce · base · nested · mise en place · house dressing · stock
Most dishes use something you make in a batch: a sauce, a dressing, a dough, house fries. Make each of those a recipe of its own, then add it to the dish like an ingredient. When an ingredient in the sauce goes up, every dish that uses the sauce goes up too.
Make the prep recipe
- Tap Library, then the Recipes tab, then New recipe.
- Enter the Recipe Name, for example Burger Sauce.
- Turn on Modifier / Component. It keeps the recipe out of the list when you add dishes to a menu.
- Tap Create & Edit Recipe.
- Under Recipe Yield, enter how much a batch makes, for example 2 qt.
- Add its ingredients, then tap Done.
The yield is what lets a dish use part of the batch, so don’t skip it. See Set a recipe’s yield.
Add it to a dish
- Open the dish’s recipe and tap the pencil icon at the top right.
- Under Ingredients, tap Add ingredient.
- Type the prep recipe’s name. Recipes show with a chef’s hat and the tag sub-recipe.
- Tap it, enter the Qty and pick a Unit.
- Tap Add, then Done.
On the dish, the line shows · sub-recipe after its quantity. Tap it to open the prep recipe. In the Recipes list, the dish gets a Sub-recipes tag.
How the line is costed
Maitaki takes the prep recipe’s cost per yield unit and multiplies it by the amount you used.
Example: Burger Sauce costs $6.00 and yields 2 qt, so it’s $3.00 per qt. A burger uses 2 fl oz. There are 64 fl oz in 2 qt, so the line costs about $0.19.
Use the prep recipe’s yield unit, or one that converts to it. If the units don’t convert (say 1 portion of a sauce that yields quarts), Maitaki counts the amount as if it were in the yield unit, so 1 portion is priced as 1 qt.
Common questions
Do I have to turn on Modifier / Component?
No. It only hides the recipe when you add dishes to a menu, which keeps that list tidy. Recipes with it on are also the ones you can offer as add-ons. See Modifier groups and add-ons.
Can a prep recipe use another prep recipe?
Yes. A burger can use a sauce that uses a stock. Each level is priced the same way.
I can't find the prep recipe when I search.
Archived recipes don’t show up. Restore it first. See Archive or restore a recipe.
How do I change how much of the sauce a dish uses?
