Margin per dish
See one dish's menu price, what it costs to make, and what's left over, at today's ingredient prices.
Also known as: profit · gross margin · contribution margin · markup · dish profit · plate margin · how much do I make on · cost vs price
Every dish on your menu has a page that shows what you charge for it, what it costs to make, and the difference. The cost comes from the recipes linked to the dish, priced from your latest invoices, so the margin moves when your ingredient prices do.
Open a dish
- Tap Library, then the Menus tab, and open the menu.
- Tap the dish.
You can also open a dish from Profit per dish in Sales. See Profit per dish and margin alerts.
Read the margin
Under Margin per unit:
| Line | What it is |
|---|---|
| Price | The dish’s menu price |
| Food cost | What one dish costs to make, from its linked recipes |
| Margin | Price minus food cost, in dollars and as a % of the price |
Example: a burger sells for $17.00 and costs $3.80 to make. The margin is $13.20, or 77.6% of the price.
Where the food cost comes from
Made of these recipes lists each recipe in the dish and what it adds to the cost. The food cost is the total of these lines. A recipe used in a part amount, like ×0.5, adds that share of its cost per yield unit.
If it says Link a recipe below to see food cost & margin, no recipe is linked yet. See Link recipes to menu items.
From POS item(s) shows which buttons on your POS ring up this dish, so its sales count toward its profit. See Link POS items to your menu.

Does the margin include add-ons?
No. The page shows the dish on its own. Add-on sales and costs are counted in Profit per dish in Sales. See Profit per dish and margin alerts.
The food cost looks too low.
Open the recipe and look for lines showing —. They couldn’t be priced and count as $0. See Units and conversions in recipes.
I picked a recipe when I added the dish. Do I still need to link it?
